The Kanosuke Double Distillery 2025 Limited Edition is a blended whisky crafted by vatting whiskies from both the Kanosuke and Hioki distilleries. Released annually as part of Kanosuke’s limited edition series, this 2025 bottling showcases a unique fusion of tradition and innovation.

At Kanosuke Distillery, barrels previously used for aging the mellow shochu “Mellowed Kozuru” are re-charred and repurposed for whisky maturation. This edition features not only Kanosuke’s signature malt whisky but also a pot still whisky made at Hioki Distillery using shochu-making techniques and ingredients like barley and malted barley, then aged at Kanosuke in these iconic re-charred shochu casks.

The key malt in this blend is a “double cask” whisky—first matured in sherry casks, then finished in re-charred shochu barrels. To add depth and character, a pot still whisky aged in rum casks and trial-produced at Hioki Distillery is included. The result is a rich, multidimensional fruit aroma reminiscent of ripe pears and dried apricots.

Expertly blended and bottled without chill filtration, this whisky offers a layered, mellow flavor profile harmonized with warm Japanese spices. It represents a new evolution in Kanosuke’s blended whisky, born from 140 years of shochu-making heritage and the bold vision of the two brothers leading the distilleries.

Although made from malt, the whisky distilled in Hioki’s stainless steel pot stills is classified as grain whisky, which is why this release is officially categorized as a blended whisky.

Nose: Dried apricot, plum compote, canelé pastry, custard cream, cinnamon bark

Palate: Ripe pear, grated apple, white peach, raisins, ginger, crème brûlée
