Continuing the limited edition series that began in 2021, Kanosuke has released its fifth installment: Kanosuke Hioki Pot Still 2024 Limited Edition. Unlike the previous editions, which all originated from the Kanosuke Distillery, this latest release comes from the Hioki Distillery.

Among Kanosuke’s regular offerings—Single Malt Kanosuke, Kanosuke Hioki Pot Still, and Kanosuke Double Distillery—the Hioki Pot Still is categorized as a grain whisky. While the 2024 Limited Edition is based on the Hioki Pot Still, its flavor profile sets it apart from its predecessor.

Crafted from barley and malted barley, Kanosuke Hioki Pot Still 2024 Limited Edition is produced using a unique method at the Hioki Distillery and matured in the Kanosuke Distillery’s warehouses. This Japanese-style pot still whisky is a vatting of spirits aged in new American white oak, bourbon, and ex-shochu casks. Despite its robust 55% ABV, it offers a smooth drinking experience. The aroma features notes of crème brûlée and fresh oak, while the palate is a harmonious blend of vanilla, caramel sauce, and a touch of bitterness.

While the whisky produced at the Hioki Distillery is classified as grain whisky, the distillery employs an unconventional distillation process. Instead of the continuous stills commonly used for grain whisky, Hioki uses stainless steel pot stills traditionally employed for shochu production. By conducting vacuum distillation in these pot stills, Hioki is able to retain more of the original flavors of the raw materials, resulting in a robust and characterful spirit.

Kanosuke Hioki Pot Still 2024 Limited Edition Tasting Note

Nose: This whisky offers a delightful nose with notes of creamy crème brûlée, freshly cut oak, ripe apricot, tart green plum, nutty hazelnut, buttery toast, and warm nutmeg.

Palate: The flavors are rich and complex. Expect notes of sweet vanilla, luscious caramel sauce, charred oak for a smoky touch, a hint of dark chocolate, and a subtle earthy note of matcha (green tea).

Finish: The finish is remarkably long and satisfying. It begins with a spicy kick reminiscent of freshly grated nutmeg, followed by a smooth, oily texture and a gentle interplay of sweetness and bitterness.

Overall: While the custard and ume fruit notes are characteristic of Kanosuke whiskies, this limited edition presents a more intense and concentrated flavor profile.
