Ontake 2025 Bottling Note

Ontake Distillery is a whisky distillery located on a 300‑hectare hillside overlooking Kinko Bay and the active volcano Sakurajima in Kagoshima, southern Japan. It is operated by Nishi Shuzo, a producer founded in 1845 and known for crafting shochu—a traditional Japanese distilled spirit—for more than 180 years. In 2019, the company expanded into whisky making. More than 1,000 litres of naturally soft spring water flow every minute from 300 metres below the distillery, forming the foundation of their whisky production.

“Ontake 2025” is the 2025 bottling of the distillery’s Japanese single malt whisky, released annually since the first edition in 2023. It is bottled at 43% ABV in 700ml format. The whisky is made from unpeated two‑row barley and fermented with proprietary yeast strains carefully selected and maintained by Nishi Shuzo. The pot stills feature upward‑angled necks, a design intended to produce a refined spirit with rich fruit aromas and a well‑balanced character.

For maturation, Ontake uses only authentic solera sherry butts sourced directly from Andalusia in southern Spain. These are genuine casks that previously held commercially sold sherry. Distillery staff travel to Spain to inspect each cask individually, checking the aroma inside before selecting it. Even the cask repairs are carried out to bespoke specifications by skilled coopers, reflecting the brand’s deep commitment to cask quality.

As the distillery began operations in 2019, the component whiskies are naturally on the younger side. However, maturation in seasoned sherry butts lends a smooth texture and a gentle sweetness. Rather than the heavy, bitter intensity sometimes associated with sherry‑forward whiskies, Ontake 2025 leans towards a fruit‑driven, elegant and softly rounded profile. It stands out as a refined single malt from a young Japanese distillery, distinguished by its careful ingredient selection and uncompromising approach to cask management.

Ontake 2025 Tasting Note

Nose: A rich and expressive aroma opens with a lightly caramelised sweetness reminiscent of karintō—a traditional Japanese brown‑sugar snack—followed by notes of dried apricot, caramelised apple and stewed prunes in red wine. Sweet, fruity layers build on top of a gently toasted base.

Palate: Exceptionally smooth and silky on the palate. Deep, mellow sweetness evokes dark fruits and roasted chestnuts, with dried fruit and vanilla harmonising softly. The overall impression is rounded, gentle and quietly indulgent.

Finish: A tender, soothing texture lingers into the finish, accompanied by a subtle hint of cask influence. There is very little of the bitterness sometimes found in sherry‑matured whiskies; instead, the aftertaste is light, delicate and quietly fading.

Overall: A gracefully composed young Japanese single malt that showcases Ontake’s dedication to cask quality and elegant flavour. Smooth, fruit‑forward and understated, it offers a refined sherry‑influenced profile without heaviness—an impressive release from a still‑emerging distillery.
