Ontake is a Japanese single malt whisky brand produced at Ontake Distillery in Kagoshima, Japan, and operated by Nishi Shuzo, a historic spirits producer founded in 1845. Launched following the distillery’s opening in 2019, the brand represents Nishi Shuzo’s expansion from traditional shochu production into Japanese whisky. Ontake whiskies are made with non-peated malt, naturally soft spring water sourced from the distillery estate, and carefully selected sherry casks, including authentic Andalusian solera sherry butts. The result is a house style focused on balance, elegance, and fruit-driven character rather than heavy peat or aggressive oak influence.
