Kanosuke Crane & Sky #5 for Whisky Talk Fukuoka 2025 is a limited edition Japanese single malt whisky bottled by Kanosuke Distillery in Hioki City, Kagoshima Prefecture, for Whisky Talk Fukuoka 2025. Distilled in 2019 and bottled in 2025, it was released at 59% ABV with a total outturn of 540 bottles. The whisky is presented non-chill filtered.

Kanosuke Distillery was established in 2017 by Komasa Jyozo Co., Ltd. and is known for its maturation environment along Fukiagehama Beach facing the East China Sea. The distillery produces multiple styles of malt spirit by utilising three different pot stills, and despite being a relatively young Japanese distillery, it has developed a reputation for focusing on diversity in spirit character and cask composition.

One of the defining features of this release is its use of Manzanilla sherry cask matured whisky. Manzanilla is a dry style of sherry produced around Sanlúcar de Barrameda in Spain and differs significantly from richer Oloroso-style sherry casks. It is often associated with drier oak influence, saline nuances, and yeast-driven complexity. Combined with the comparatively soft and sweet character often associated with Kanosuke malt, the cask influence creates a profile distinct from more heavily sweetened sherry cask styles.

The “Crane & Sky” series has been released as an ongoing private bottling range for Whisky Talk Fukuoka, with previous editions featuring bourbon casks and red wine casks. The 2025 edition takes a noticeably drier and more structured direction through the use of a Manzanilla cask. Overall, it presents a layered combination of fruitiness, salinity, oak, and gentle spice, giving it a distinctive character among recent Kanosuke single cask releases.

Nose: Orange peel and dried fruit aromas layered with hints of nuts and dry sherry. A soft sweetness typical of Kanosuke is also present.

Palate: Smooth and fruit-forward on the palate. Saline notes and dry oak, likely influenced by the Manzanilla cask, tighten the structure, followed by a gentle touch of spice.

Finish: Dry oak and nutty notes linger softly, leading to a restrained and structured finish rather than overt sweetness.

Overall: A combination of Kanosuke’s soft spirit character and the dryness and salinity associated with Manzanilla casks. It takes a different direction from richer, heavily sweet sherry styles.
