Kanosuke Single Malt Peated Bottling Note
Kanosuke Single Malt Peated is a new, limited-edition peated Japanese whisky joining the Single Malt Kanosuke series—the distillery’s flagship product line.
To create the Kanosuke Single Malt Peated, the distillery optimized its mashing and distillation process. Taking advantage of the warm Kagoshima climate, they implemented a fermentation period twice as long as that used for Scotch whisky. This extended process resulted in a mellow, rich, and creamy wash (fermented mash). Next, they used their three copper pot stills, equipped with traditional worm tub condensers, and lengthened the middle cut during the distillation of each new pot. This careful approach produced a peated whisky with a softer, yet more profound smoky flavor.
Finally, the key malt used was peated whisky matured in shochu-cask re-charred barrels and Bourbon barrels—part of the Kanosuke DNA. This was accented with whisky matured for six years in Manzanilla sherry casks (a dry Spanish sherry), which drew out fresh citrus and herbal nuances to complement the smoky finish.
The result is a harmonious balance: retaining the mellow mouthfeel of the rich, fruity Kanosuke Single Malt, but adding a softly expanding smoky flavor achieved through extensive trial and error. This is a mellow, peated Japanese whisky that embodies the terroir of Hioki, Kagoshima, with a touch of sea breeze.

Kanosuke Single Malt Peated Tasting Note
Nose: Cassis, caramel, honey butter, baguette, gentle katsuo dashi (bonito stock)
Palate: Quince candy, pear, kumquat compote, smoked bacon, rock salt candy, kinako (roasted soybean flour)
Finish: Tart quince and faint bitter citrus, beckoning the next sip
Overall: A wave of fresh aromas—herbs and citrus—mingle with a sweet and sour note reminiscent of cassis, followed by the juicy sweetness of pear. Underlying this are rich, profound layers of flavor, including the savory umami of bacon from the peat and a subtle hint of salt. Kanosuke Single Malt Peated is excellent served neat or on the rocks, but a refreshing Highball is particularly recommended in the summer. It pairs exceptionally well with snacks like smoked nuts, a bacon burger, or seafood barbecue enjoyed by the sea.
