Detailed Description
In April 2026, Kanosuke Distillery will release a limited small‑batch bottling, Kanosuke Single Malt IPA Cask Finish, available exclusively through the distillery shop and its online store. This special edition takes the key malt of the flagship Single Malt Kanosuke—spirit matured in shochu‑rechar casks—and finishes it in two different Double IPA casks.
The IPA casks used for this release began life as casks that had previously matured Kanosuke’s own whisky (primarily shochu‑rechar cask stock). These casks were then entrusted to two like‑minded craft breweries, where they were used to barrel‑age hop‑forward beers such as Double IPA and Imperial IPA for a set period. Once the beers had matured and taken on the character of the wood, the casks returned to the distillery, where Kanosuke’s shochu‑rechar cask whisky was filled back into them for finishing. Several finished parcels were then vatted to create this release—a true collaboration between craft whisky and craft beer.
The Double IPA casks impart a powerful hop aroma and refreshing citrus notes, adding new colour to Kanosuke’s mellow, layered house style. The contrasting personalities of the two IPA casks—one rich and weighty, the other light and aromatic—bring honeyed depth and lime‑like brightness. Meanwhile, the shochu‑rechar casks contribute a nikki‑like Japanese spice that harmonises with the hop bitterness, shaping a distinctive flavour profile.
Beer malt character adds a sweetness and freshness different from whisky malt, while Kanosuke’s own sweetness (from shochu‑rechar and bourbon casks) meets the IPA casks’ lively citrus lift. Notes reminiscent of lemon tea rise through the palate, and the interplay of sweetness and bitterness may evoke a subtle tropical impression.
Both IPA casks used for this release were seasoned with citrus‑forward Double IPAs, leaving impressions of grapefruit peel bitterness and juicy citrus typical of Citra‑style hops. The two partner breweries specialise respectively in “rich, malty IPAs” and “aroma‑driven, lighter IPAs”, creating a clear contrast in the finished parcels. As a result, the final vatting achieves a balance of weight and brightness that would be impossible with a single IPA cask.
The warm climate of Minamisatsuma, where Kanosuke’s warehouses stand, further enhances the citrus notes drawn from the IPA casks and helps the hop bitterness and shochu‑rechar spice meld naturally.
The key themes of this bottling are citrus, bitterness, and sweetness. The individuality of the IPA cask finish merges seamlessly with Kanosuke’s mellow character, creating a new and distinctive expression.
Kanosuke Single Malt IPA Cask Finish Tasting Note
Nose: Fresh green apple, candy floss, and soft malt sweetness. Bright citrus from the Double IPA casks rises immediately, joined by a nikki‑like Japanese spice from the shochu‑rechar casks, bringing freshness and gentle warmth.
Palate: Elegant citrus reminiscent of lime and lemon tea spreads across the palate, supported by a pleasant hop‑derived bitterness. Honeyed sweetness combines with the distinctive malt sweetness from beer malt and a light, refreshing lift. The contrasting characters of the two IPA casks—rich and weighty vs. light and aromatic—form layered complexity.
Finish: Mellow sweetness and hop bitterness unwind slowly, tightened by the spicy edge of the shochu‑rechar casks. Citrus brightness lingers, leaving a finish that is light yet well‑defined.
Overall: The themes are citrus, bitterness, and sweetness. Fresh green apple on the nose, honey and lime on the palate, and a balance of hop bitterness and nikki spice create harmony. The personalities of craft beer and craft whisky merge beautifully, adding new colour to Kanosuke’s signature mellow style and delivering a layered, memorable dram.
